CLASSIC CRICKET FAJITAS

INGREDIENTS


Red Onion - 1

Red Pepper - 1

Yellow Pepper - 1

Little Gem Lettuce - 1  

Red Chilli - 1

Garlic Cloves - 1

Smoked Paprika - 1/4 tsp

Cumin - 1/2 tsp

Chilli Powder - 1/2 tsp

Lime - 1/2

Coriander - small handful

Olive Oil



METHOD


1. PREP THE CRICKETS | 5 mins

  • Soak the crickets in water and set aside.

  • Mix smoked paprika, cumin, and chilli powder with finely chopped garlic cloves and half lime juice, and set aside.


2. PREPARE THE VEGETABLES | 10 mins


  • Dice the pepper and onion, and chop the coriander.

  • On a medium-high heat fry the chopped pepper and onion for a few minutes until they start to soften.

  • Add the soaked crickets, spices that you set aside and chopped coriander and fry until the vegetables are cooked. Make sure they don’t get too soft, there should be some crunch! 


3. SERVE | 5 mins


  • Serve the filling in a warm tortilla wrap with lettuce, salsa, sour cream or plain yogurt, and a dirty little sprinkle of cheese.
