30g cricket powder (or buffalo worm powder)
2tbs raw coco powder
1tbs coconut oil
1tbs almond butter
30g Desiccated coconut + extra for coating
Handful of dried crickets (for the hardcore)
Bring a pan up to boil and add the dates. Boil for around 10 minutes until the dates have softened. Drain water and leave to cool.
Add the almonds to a blender and lightly blitz them. This will make the almonds easier to blend with the other ingredients. Add the boiled dates, lightly blitzed almonds, coconut oil, almond butter, cricket powder, desiccated coconut and a handful of dried crickets (if you want to add a bit more protein and crunch). Give it a good blitz until it’s smooth and well combined.
When the mixture has become soft and slightly sticky roll it into balls. Dunk the balls in desiccated coconut (to get the best coverage you may want to slightly wet the outside of the balls with water – works a treat).
If you can refrain from eating them all immediately, you can store them in an airtight container. Or you can do what we did and inhale them right away. 🤘
