STICKY TERIYAKI CRICKET SUSHI BOWL


Sticky teriyaki cricket sushi bowl with rice, veggies, edible insect and sauce.

Perfect for if you're feeling a little naughty, or throwing together a party!

INGREDIENTS


Jasmine Rice – 150g

Cucumber – ¼

Sesame Seeds

Black Onion Seeds


Asian Slaw:

Red Cabbage – ¼

Carrot – 1

Radishes – 6

Lime, juice – 1

Spring Onion – 1

Coriander – handful

Salt and Pepper


Satay Sauce:

Peanut Butter – 3 tbsp

Honey – 1 tsp

Curry Powder – 1 tbsp

Coconut Milk – 165 ml

Lime, juice – 1

Soy Sauce – 2 tbsp


Pickled Onion:

Red Onion – 1/4

Rice Vinegar – 50 ml


METHOD


1. PREPARE THE ASIAN SLAW | 15 mins

  • Slice the red cabbage, radishes, and spring onions.

  • Grate the carrot.

  • Chop the coriander.

  • Mix all the ingredients together and leave for 15 mins.


2. PICKLE THE ONION | 15 mins

  • Thinly slice the red onion.

  • Add the rice vinegar and leave to pickle for 15 mins.


3. COOK THE JASMINE RICE | 12 mins

  • Add the jasmine rice to a pan of 170 ml water.

  • Bring to a simmer then reduce heat to low and put a lid on.

  • Cook for 12 minutes without stirring.


4. PREPARE THE CRICKETS | 5 mins

  • Prepare and cook the crickets as per the instructions on the Bug Kit.


5. MAKE THE SATAY SAUCE | 5 mins

  • Add all the ingredients into a pan and warm until combined.


6. ASSEMBLE | 2 mins

  • Add the rice to two separate bowls.

  • Arrange the rest of the components on top as you wish.
